I have been working with siblings, Michelle and Vicki Ly and their company Vinn Distilling for some time. Most people have never heard about the rice spirit Baijiu, but I have to admit that I’m rather fond of it. It’s funky and potent and not like any other spirit on the planet. I had met with Vinn in 2017 to recommend the creation of a wintery beverage based on their award-winning Baijiu. After some experimenting, I came up with this Honey-based recipe that has a lovely sweet and malty flavor coupled with cinnamon and clove. Vinn Honey Baijiu turned out to be quite a hit at their tasting room and they will now be offering it every Winter!
