Below Deck Rums
Back in 2008 Below Deck Rums were born out of visits to Belize and making concoctions in my friend’s basement bar, affectionately known as Below Deck.
Below Deck Ginger Rum
Ginger is one of my favorite flavors. Though in spirits the flavor tends to lean towards the candied ginger flavor with an abundance of sugar. As a bartender friend of mine once told me, you can always add sugar so why not be different? My goal was a zesty bright ginger flavor, so I added dried ginger chunks and ginger powder in a simple maceration with our Silver Rum and my first spirit, Below Deck Ginger Rum was born.
Below Deck Coffee Rum
Portland Roasting Coffee cold brewed to perfection was added to our Silver rum along with an extra kick of instant coffee powder, and Below Deck Coffee Rum was released in 2010. Adding just a touch of cane sugar syrup gave this flavored rum a smooth deep rich coffee experience.

Below Deck Spiced Rum
I’ve always been a fan of spiced rum, so in early 2012 I started working on a low-sugar flavor profile. To get the balling rolling I collaborated with friend and local rum expert, Roger Patteson. I love working with other industry experts, and our result was a bold, spicy rum both complex in character and yet easy to enjoy in a zesty Cuba Libre.
